The sequence

Industrial tomato is a campaign product with a narrow production window and a well-defined parameter set. Most buyer risk sits in specification precision and in booking capacity before the campaign fills.

  1. 01

    Specify concentration and process

Target Brix range, hot break or cold break, and the intended downstream use. Hot break and cold break are not interchangeable and the choice drives viscosity behaviour in your own process.

  2. 02

    Set the full parameter list

Brix, pH, Bostwick at a stated temperature, colour by an agreed scale, Howard mould count, mould-free tomato solids, and heavy metal and pesticide limits for your destination.

  3. 03

    Book against the campaign

Production is concentrated into the harvest window. Capacity is committed early and cannot be recreated later in the year; aseptic stock drawn after the campaign is a different commercial conversation.

  4. 04

    Qualify the processing site

Confirm the entity, the aseptic line, the certification scope and the laboratory that will issue release results. Ask how out-of-specification lots are segregated during a campaign running at full rate.

  5. 05

Agree the acceptance and testing protocol

Name the reference laboratory, the retained sample protocol and the tolerance for each parameter. Tomato disputes usually turn on method and sampling rather than on the product itself.

  6. 06

    Send the brief

Brix, break type, drum or bin format, volume, destination and campaign window.
