The sequence
Purees and concentrates are bought on measured parameters. Work through the sequence in order; each step closes a variable that would otherwise become a dispute after shipment.

Fix the product definition before the supplier list
Decide the fruit, the variety where it matters, single strength or concentrate, the target Brix and the acidity range. A request for "mango puree" returns quotations that cannot be compared to each other.

Choose the preservation and pack format
Aseptic bag-in-drum, aseptic bag-in-bin, frozen block and hot-fill each carry different shelf life, cold chain cost and minimum run. The format decision constrains which factories can quote at all.

Write the analytical specification
Brix with method, pH, titratable acidity, viscosity or Bostwick, colour, defect counts, microbiological limits and pesticide limits for your destination. Include the tolerance, not only the target.

Qualify the manufacturing site
Confirm the legal entity, the site that will actually run your product, the certification scope covering aseptic processing, and the traceability chain back to the growing region.

Check season, capacity and lead time
Fruit is seasonal and campaign-based. The window in which your product can be made may be a few weeks, and available capacity in that window is what matters, not annual tonnage.

Approve samples against the specification
Require a production-run sample, not a bench sample, with a certificate of analysis. Sign and date the reference and require the first commercial lot to be compared against it.

Send the brief
